  1. For diabetics, this dessert takes care of the largest sweet tooth
  2. (and non-diabetic loves it, too)
  3.  
  4. Orange Jell-o Salad
  5.  
  6. 2 boxes sugar free orange jell-o
  7. 1 cup boiling water
  8. 3 oz. cream cheese (I use the light - DON'T use
  9. the fat free - big yucky mess)
  10. 1 small can pineapple, drained (save the juice)
  11. 1 small can Mandarin oranges, drained (save the juice)
  12. 3 cups low fat whipped cream (Again, don't use the fat free)
  13.  
  14. Dissolve jell-o in boiling water.  Stir in 1 cup of juices from
  15. drained pineapple and oranges.  Let set until consistency of a raw
  16. egg.  Beat cream cheese at low speed until smooth.  Add pineapple,
  17. oranges, and jell-o.  Blend well.  Mix in whipped cream.  Refrigerate
  18. till firm.  Serves 4.
